I already have one, and I'm buying another for my little girl to use.

Will I be able to use the same Apple ID etc on the new one whilst she continues to use the old one?

Yeah, or you could email them to yourself and create a new Apple ID, for either you or your daughter. If you did that - you could save the videos onto your phone.
