I make my sauces with chopped tomatoes, tomato puree, beef stock, basil, oregano, garlic, onion, peppers and mushroom. Normally served with minced beef of course. Tasty with meatballs added too.

Also for anyone that wasn't aware, fresh garlic >>>>>>>>>>>>>>>> any other kind.

Here's mine;
Fresh tomatoes (blanched then put in iced water, peel skins)
Tinned plum tomatoes
Finely diced red chilli
Shallots
Garlic (twatted into a paste with salt)
Crushed black pepper
Single block of strong dark chocolate (grated)
Red wine reduction
Pimenton
Basil (fresh)
Oregano (dried)

For the meatballs
50% minced strip loin
25% minced pork belly
25% minced lamb rump
Crushed garlic
Fresh oregano
Fresh basil
Cracked black pepper
Mix well,form and leave to chill and set.
For the tomato sauce.
Shallots
Crushed fresh garlic
Tomato concasse
Tinned tomatoes from plants grown on the foothills of Vesuvius
Marsala
Strong Italian red wine( barrollo)
Touch of dark brown sugar
Reduced venison stock
Fresh basil( ripped not chopped)
Truffle oil to finish.

Oh and serve a wild garlic and black truffle salad. ( after, not before and definetly not with ffs)

Lets talk breakfasts.

Like the rest of instagram, avocados and poached eggs on toast are a current favourite of mine at the moment but huevos rancheros also get made on the odd Saturday. Any other suggestions?

Not an egg man but avocado and vegemite on wholemeal or seeded toast is wonderful.

Cover it with lashings of grated extra mature cheddar and it's heavenly. [/Pagnell]

Avacados are one of the few things I can't eat, horrible slimy fuckers.

One slice granary toast, baked beans topped with two poached eggs. Drizzle with HP. My breakfast heaven.

Failing that, Kippers.

Eggy crumpets were a uni Sunday morning favourite. Add in a but of chilli for a kick and some fried Bacon cos we got to die of something.

I can see you are interested mate so I put together a little guide for you.

Step one - Place two pieces of bread, preferably Kingsmill 50/50, onto a plate that has instructional commands like "relax" or "eat" on it.

Step two - Apply Flora buttery to each slice of bread. This is very important.

Step three - Lovingly place two low quality pieces of corned beef onto the freshly buttered Kingsmill 50/50 bread.

Step four - Slice the sandwich triangularly - this is VERY important.

Step five - I recommend pairing this dish with a light, sparkling vegetable extract drink.

You haven't even put any mayo or tomato in there. Mustard even. You'll need that drink just to choke that down.

I've fallen in love with poached egg caprese.

Cut an English muffin in half and stick them under the grill. Place a slice of tomato on each and then as much mozzarella as you please of top of that. Allow the cheese to melt and then remove from the grill and place your poached eggs on top. Finally, garnish with a little pesto.
